Culinary Flair Highlights ‘Club Night Evolution’ at Six Peaks Grille

Olympic Valley, Calif. – Resort at Squaw Creek’s Six Peaks Grille is offering “Club Night Evolution,” an evolutionary experience in dining, during the 24^th Annual Lake Tahoe Autumn Food & Wine Festival.  Beginning at 5:30 PM on Friday, September 11, the dinner and wine event will feature a dining experience that transports guests to three locations, from a chef-prepared “duet’ appetizer opener on the scenic outdoor terrace of Six Peaks Grille, to a formal dinner in Six Peaks Grille, to a dessert finale in “The Club,” heated with South Beach-style atmosphere. 

For the appetizer presentation Resort at Squaw Creek’s top chefs Jason Friendy, Chad Shrewsbury, Sarah Kops and Matt Hale will fire up their creativity at three cooking stations.  Among the appetizers to be served are a dish with yellow fin tuna crudo, spicy banana pepper, candied ginger, orange zest, micro cilantro, and tropical salts paired with a 2008 Adobe Road Rosé.   Another creation will features poached lobster, sweet pumpkin ravioli, carrot emulsion, and diakon relish with Adobe Road Sauvignon Blanc, 2006.

During the formal dinner portion of the evening, the entrée will feature a “duet” of butterscotch rum poached halibut, fresh popped corn, caviar and summer truffle foam accompanied with Wagyu beef tenderloin with saffron hot mayo. 

Dessert in “The Club” will offer Key lime nitro ice cream.

“It’s an evolution in taste and experience,” said Ramon Villegas, director of restaurants at Resort at Squaw Creek.  “We know it will make for a memorable night.”
