Farm to Tahoe Summer Culinary Series at Resort at Squaw Creek Showcases Best Produce from the Sierra Foothills

OLYMPIC VALLEY, Calif. – May 21, 2014 – This summer, Resort at Squaw Creek, by Destination Hotels & Resorts, is kicking off a Farm to Tahoe culinary series in Lake Tahoe that showcases the best produce found in the Sierra Foothills. The series begins Memorial Day weekend with a dinner on Saturday, May 24 at 7 p.m.

"Summer is the season of abundance in Northern California,” said Executive Chef Jason Friendly. “In Tahoe, we have access to incredible ingredients from the hundreds of small farms in the foothills. We are designing the three dinner menus to reflect the freshest produce available, and putting our own Four Diamond touch into each offering.”

Each dinner will be served community-style in Six Peaks Grille, one of North Lake Tahoe's premier fine dining establishments. Guests will be treated to a variety of imaginative dishes from the culinary team at Resort at Squaw Creek, with menu items sourced direct from local farms, as well as by Tahoe Food Hub, Produce Plus, and other local purveyors of regional produce.  Each course also will be paired with a 2 oz. wine tasting from a Northern California winery, presented by the winemaker.

The May 24 menu features a first course of ember chilled beets, wrinkle crinkle cress and apricot consommé from Mount Pleasant Farm & Garden in Lincoln, Calif. The second course includes a duet of tuna and scallop carpaccio with artichoke, heirloom carrot, radish young garlic and cockle broth from Foothills Roots Farm in Meadow Vista, Calif. and Mooney Flat in Smartsville, Calif. The entrée features roasted lamb with spring onion relish, pickled orange and sweet pea from Natural Trading Company in Newcastle, Calif. Dessert is a Fig Newton terrine with chocolate earth, agave nectar plum jus and micro mint from Greg’s Organics in Grass Valley, Calif. The featured wine for the inaugural dinner is Don & Sons out of Sonoma.

Additional dinners will take place on July 5 and Aug. 30. A different menu will be featured each evening. Each dinner is $80/person or $215/person for all three. Resort at Squaw Creek’s Farm to Tahoe series is part of the Study of the Seasons culinary initiative by Destination Hotels & Resorts. “The Study Of” culinary series featured an in-depth exploration of ingredients with the chefs of the Destination Culinary Collection.
