Resort at Squaw Creek, A Destination Hotel, Grows its Farm-to-Menu Program with New Rooftop Roots Garden

Garden Mixology Series to Start in July


OLYMPIC VALLEY, Calif. – July 12, 2016 – Resort at Squaw Creek, A Destination Hotel, is taking “fresh” to the next level with its new on-property rooftop garden program. The resort has always sourced the freshest produce from its vendors, but is taking the supply chain from miles to feet for a variety of vegetables and herbs.

Rooftop Roots, the name of the new garden, was planted on top of Sweet Potatoes Deli this spring and will produce a variety of vegetables such as onions, radishes and micro-greens as well as herbs like rosemary, basil and mint. The produce from Rooftop Roots will be incorporated into menu selections for Six Peaks Grille, Sandy’s Pub, Cascades, Sweet Potatoes Deli and group/corporate meetings at the hotel this summer.

“Our mountain location provides a number of challenges for growing fresh produce,” said André Priemer, general manager at Resort at Squaw Creek. “For this reason, we researched and invested in a state-of-the-art hydroponic system that will yield a larger quantity of produce much faster. The result of our effort is the only hydroponic, organic garden in the Tahoe region.”

Priemer anticipates the 1,500-square-foot garden will produce an excess of vegetables and herbs, so the resort is partnering with Tahoe Food Hub and plans to sell the surplus to the organization. Tahoe Food Hub is a non-profit organization that is working to restore local food distribution by building a regional food system for North Lake Tahoe. Tahoe Food Hub has created a network of regional farms within 100-miles of North Lake Tahoe and connected them with restaurants, small grocers, schools and hospitals. Resort at Squaw Creek also will continue to purchase additional produce through Tahoe Food Hub to supplement its on-property efforts.  

The new Rooftop Roots program is a great compliment to what new Executive Chef Timothy Hmay brings to Resort at Squaw Creek. “We are a local hotel and we support local,” said Chef Hmay. “I want to use Mother Nature to make my food great, I don’t want to use product.” For Chef Hmay, this means simple, organic, sustainable and seasonal products will be incorporated into all recipes.

Chef Hmay will highlight this philosophy in a series of Mixology Classes later this summer. “We are excited to enliven this new program through a series of Mixology Classes starting in July that will allow our guests to sample the produce and see the hydroponic system we’ve created on property.”

The resort’s farm-to-menu philosophy already is most notably recognized in its garden-to-glass program that mixologist Tam French at Six Peaks created over the last two years. French has integrated fresh herbs that are grown on the Six Peaks deck into her creative cocktails such as Tahoe Tea that features Buddha Hand Hangar 1 vodka, Tazo Tea, fresh garden grown mint served over iced lemonade cubes and the Cliff Collins with Beefeater 24 Gin accented with the resort’s own lavender, fresh pressed lemon and house-made honey bee syrup.

French and Chef Hmay have teamed up for Mixology Classes on three Thursdays starting in July – July 30, Aug. 13 and Sept. 3. The classes are from 5 to 6 p.m. and include three drinks and small plate items featuring selections from the garden. Cost is $50 per person and classes are limited to 20 people. The new Rooftop Roots program compliments the other exciting enhancements at Resort at Squaw Creek. The property recently completed a $7 million guest room renovation to further enhance the experience for travelers visiting the Lake Tahoe region. As part of the renovation, guest rooms have been refinished with soothing neutral textures and colors such as warm wood tones, rich leather, mixed metal and natural stone. Mindful of the property’s stunning views, the design includes new elements of light drapery and pops of color to complement and maximize Resort at Squaw Creek’s surroundings. The new modern meets mountain design aims to give guests a sense of place as it draws inspiration from natural surroundings found in the Olympic Valley and surrounding Sierra Mountain range.
