The dinner in Six Peaks Grille begins with freshly-baked sourdough bread served with whipped butter and volcanic sea salt, a starter of organic California heirloom tomatoes, dressed with a chiffonade of basil, feta cheese and imported Banyuls vinaigrette, and a main course of brown butter pan-fried Idaho red trout, herb crusted fingerling potatoes, grilled asparagus and Irish oat veloute. The meal is completed with a dessert of chocolate lava cake with tarragon syrup, and house made vanilla bean ice cream.
