Resort At Squaw Creek's Six Peaks Grille Inroduces New Chef, G.M., Menu
OLYMPIC VALLEY, Calif. - Maarten VanKruyssen, who was Resort at Squaw Creek's pastry chef for four years in the mid-1990s, has returned to the perennial AAA Four-Diamond property as the new executive chef for Six Peaks Grille, which is open daily for breakfast, lunch and dinner.
VanKruyssen's arrival has been timed with the introduction of a new dinner menu with a flair for Sierra West fire-grilled cooking accented with fresh regional products and ingredients. Among the new menu additions are Elk Medallions, Grilled Aged Bone-in Rib-Eye, Apple Brined Pork Tenderloin, Beef Filet Mignon with Jumbo Prawns, Poached Pacific Halibut and Roasted Salmon.
On Saturday and Sunday evenings, Six Peaks Grille is introducing Broken Arrow Prime Rib Nights, with both 12-ounce and 16-ounce cuts available and served with garlic mashed potatoes, au jus and creamy horseradish.
An array of creative appetizers, homemade soups and salads accent the new dinner menu.
Joining VanKruyssen in guiding Six Peaks Grille is Michael Culp, recently named as the restaurant's general manager.
After VanKruyssen's tenure as the resort's pastry chef from 1993 to 1997, he operated the Flying Dutchman Bakery in Incline Village. Most recently, he was with Moody's Bistro in Truckee.
Six Peaks Grille is named for its location as it is surrounded by spectacular views from virtually every seat of the majestic six peaks of Squaw Valley. Guests are provided the option of dining inside, bordered by a beautiful stone fireplace, or dining outside, warmed by the resort's large fire pit. The family friendly setting provides seating for 130 overall, 90 indoors.
The restaurant is open daily for dinner from 5:30 to 10 p.m. Breakfast hours are 7 am to 11 a.m., while lunch is served from 12 noon to 2:30 p.m.
