Thanksgiving Diners Find Gourmet Choices at Resort at Squaw Creek

Olympic Valley, Calif. – This Thanksgiving holiday Resort at Squaw Creek’s chefs will offer diners two memorable gourmet options. The first option is Resort at Squaw Creek’s popular Thanksgiving buffet, which has become a Tahoe tradition for many; it returns on Thursday, November 28, with seating times available at either 3:00 p.m. or 6:00 p.m. Alternatively, those looking for a sophisticated prix fixe 5-course dinner have the opportunity to take part in the second option by dining in Six Peaks Grille. Keep in mind that reservations are required, and space is limited for both holiday dinners.
Taking place in Cascades Restaurant, the buffet entices guests with tasty starters, including roasted butternut squash soup with toasted pumpkin seeds and brown butter, the “Snowy Pine Green House” salad with butter lettuce, watercress, sweet basil leaves, tomato relish and pecorino crisp. Additional salads, cheese assortments and charcuterie plates will be offered as well.
At the carving station guests will find butter-basted turkey, cast-iron sweet onion and apple cornbread stuffing with sage gravy and cranberry relish. In addition hot entrees include pan-seared wild salmon with creamy chanterelle mushroom risotto, braised lamb shoulder with roasted cauliflower and spiced herb butter, and rabbit sausage with collard greens and winter bean ragu. Garlic whipped potatoes, candied yams with local honey meringue, and Brussels sprouts with pancetta will be available to accompany main dishes.
Of course, no Thanksgiving dinner is complete without dessert, and the “sweet’s table” will feature mini pumpkin cheese cake, pecan almond tarts, raisin apple cobbler and chocolate truffle pudding with raspberry.

In Six Peaks Grille, chefs will prepare an inventive 5-course menu that begins with a first course of California smoked trout with cranberry horseradish, fresh dill and pumpernickel toast. The second course features butternut squash soup with vanilla crème fraiche and cinnamon toasted almonds. The third course presents diners with an apple butter cup with graham cracker dusted apples, chive, thyme-infused honey butter, and leaf lettuce. For the fourth course, guests have the opportunity to select one of four options: whole roasted squab with tri-colored lentils, root vegetables and rosemary pan jus; venison tenderloin with Brussels sprouts, chanterelle mushrooms and balsamic reduction; veal osso buco with creamy gruyere polenta, new carrots and red wine demi-glaze; or a traditional Thanksgiving dinner with butter-basted turkey breast, sweet onion and apple dressing, and cranberry relish. Dessert offerings include the choice of pumpkin cheese cake or almond brittle. This dinner is $95 per person, with a wine pairing available for an additional $25 per person. The Thanksgiving weekend brings the official start to Resort at Squaw Creek’s Magical Memories holiday celebration. The event kicks into high gear on November 29 with the Gingerbread Village Unveiling and Grand Tree Lighting Ceremony, taking place from 5 p.m. to 8 p.m. Santa and Mrs. Claus will make an appearance.
